Sean, the only regular seating at Sapphire pool if you don’t pay for a lounge chair is the seating in the bar area (bar stools). But I often sit there when I go to the pool, because that’s where the free shade is.
I’d go to Palomino on a Sunday night. Call for the free limo. If you arrive before 8 pm, admission is free, otherwise they will likely charge you a cover of $30 each, but they’ll offer you a package at the door for roughly the same amount that will include reserved seating for the night, and I’d take that.
Enjoy the terrific show, enjoy the drinks that come with your package or cover, and get a nude couples’ dance in one of the private curtained booths for $100. That will give you a great evening with plenty of tips for dancers, driver, and waitresses for $200 or under total.
Another option if you don’t care about booze would be Little Darlings. Call for the free limo and admission would be $15 each. There are private bedroom dances starting at $125 for 15 minutes, but the dancers usually charge a bit more and that might cut it a little close for your budget. But you can get fully-nude private-booth couple’s lap dances there starting at $20 (most dancers will ask for $30-$40, most likely $40 since you’re a couple). Since you can get soft drinks for $4 (ask the price when you order, since some things like Red Bull are much higher), you could get a number of these shorter private shows.

Sean, if you get there after 8 pm, there is usually a $30 cover per person and that gets you two drinks each. After that, a draft is $6, a bottled beer is $7 or $8.
But on a Sunday night they’ll often offer you a package at the door that includes a VIP table and maybe a half bottle and mixers for around $60 for two people. That depends on the crowds though.
The $100 for the private curtained-booth dance would include both people in a couple (not $100 each).
Also, for either place when calling for the limo is there a recommend time you suggest. Like 1 hour before we too arrive, 30min?
Sean, it’s best to reserve the limo as early as possible. Even a day or two in advance is fine–they’ll arrange with you to call and confirm an hour or two before actual pick-up. Some people reserve weeks in advance, even months. If there are a lot of people asking to be picked up at the same time, the first to reserve get that time.
If you’re playing it a bit looser, try to call at least an hour or two before the time you want to be picked up. If you’re going to dinner and aren’t sure of the exact time, still call and give them a general idea and they’ll work it out with you from there.

Tessa, I’ve heard cocktail servers do very well at all the clubs. You might start at Sapphire and Palomino Club for the best tips, then Rhino and Hustler. Girl Collection would be good too. Palomino has an exceptional reputation for treating employees well. Girl Collection too. Crazy Horse 3 gets more locals but often decent crowds and locals tend to be generous with each other.
